In Season’s 3 kickoff episode of Mind Of A Chef titled “Origin”, debuting on PBS September 6, Edward Lee finds common ground between growing up in Brooklyn hanging out with writers doing graffiti and his approach to creating a signature dish as a professional chef. Reminiscing on his time as a 13 year old look out for his boy, Edward Lee states that the act of tagging is similar to how he creates a signature dish, where he sends it out again and again with subtle changes to each round.
Its really interesting to see how graffiti and that NYC state of mind permeates far beyond the tunnels and walls of the Big Apple. Watch the short clip above and stay tuned to PBS on September 6th for Mind Of A Chef.
